Extreme weight reduction

Hey, in most events, is it required to have a windshield? How about doors? Can I ditch the doors and weld a couple bars right there? Me and my friend are beginning a drift car project with a major emphasis on weight reduction. I wanna chop as much shit off as I can. Is it okay if we run with no panels? (fenders, bumpers, hood, roof, etc)

but with some cage work.

Yeah you could run without a bumper or a hood .... but there is NO way they'll let you run like that! Plus not to mention that if you cut a car up like that there would be NO cassis rigidity unless you did extreme cage work.
